“I have made these in the Lab in Torrington every year for Halloween for over twenty years”
Ingredients:
Cake:
- 2 cups GW Granulated Sugar
- 2 cups flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tbsp. pumpkin pie spice
- 2 tsp. cinnamon
- 2 cups pumpkin puree (16 oz. can)
- 3/4 cup oil
- 4 eggs
Icing:
- 3 oz. softened cream cheese
- 1 tsp. milk
- 1 tsp. vanilla extract
- 6 tbsp. margarine or butter
- 1 1/2-2 cups GW Powdered Sugar
Instructions:
- Combine all dry ingredients.
- Add pumpkin, oil, and eggs and mix until smooth.
- Spread in greased 15x10x1 pan and bake for 20-25 minutes.
- Mix icing ingredients and spread onto cake.
- Add nuts if desired.
