“I have made these in the Lab in Torrington every year for Halloween for over twenty years”

 

Ingredients:

Cake:

  • 2 cups GW Granulated Sugar
  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tbsp. pumpkin pie spice
  • 2 tsp. cinnamon
  • 2 cups pumpkin puree (16 oz. can)
  • 3/4 cup oil
  • 4 eggs

 

Icing:

  • 3 oz. softened cream cheese
  • 1 tsp. milk
  • 1 tsp. vanilla extract
  • 6 tbsp. margarine or butter
  • 1 1/2-2 cups GW Powdered Sugar

 

Instructions:

  1. Combine all dry ingredients.
  2. Add pumpkin, oil, and eggs and mix until smooth.
  3. Spread in greased 15x10x1 pan and bake for 20-25 minutes.
  4. Mix icing ingredients and spread onto cake.
  5. Add nuts if desired.
